"Out of many, one" 
This motto sums up my “Gem Satz” better than anything. Ironically, here in the USA (who’s currency uses this same motto) we are taught that single varietal wines are superior and that blends are “inferior”. To me, there is another level of wine that demands to be understood. Some of the most exciting wines made around the world are co-fermentations. These differ slightly from “blends” as the grapes are fermented together, while “blends” are normally fermented separately, then assembled before bottling. This is akin to cooking all of the ingredients of Jambalaya separately then assembling them in the bowl just before it is served. The assembled Jambalaya would taste differently than the ingredients of Jambalaya cooked together. Taste is what it is all about. Essentially, we have done the same things here. We fermented all of the grapes together to create one wine. Making wine is like cooking.
